WORKING METHOD: The olives are harvested by hand and processed in the day in a crusher with cold pressing and in a continuous cycle. They are not used machinery to filter it, but decant naturally.
ACIDITY ANALYSIS OUTPUT: 0.18 gr./L
(the reference values ​​set by the PEROXIDE 7 law they are for the acidity max. 0.90gr / l e for peroxides max. 20).
COMBINATIONS: Excellent used raw in numerous combinations because it enhances the flavor of the dishes.
