WORKING METHOD: The olives are harvested by hand and processed
in the day in a crusher with cold pressing
and in a continuous cycle. They are not used
machinery to filter it, but decant naturally.
ACIDITY ANALYSIS OUTPUT: 0.21 gr./L
(the reference values ​​imposed by the law PEROXIDE 9.25 they are for the acidity max. 0.90gr / l e for peroxides max. 20)
COMBINATIONS: For its hint of fruity harmonic, tendentially is ideal in first courses, cooked vegetables, roasted fish,
